Salmon and Couscous Packets

Ingredients
4 sheets aluminum Foil1 pkg (5.8oz) Couscous1 ¼ C Water – Divided1 Zucchini – Sliced1 Yellow Squash – Sliced4 Salmon Filets1 tsp Olive OilSalt & Pepper to taste1 Lemon – Sliced
Directions
1. Preheat oven to 450°F.
2. Mix Couscous, seasoning packet & ¾ C water.
3. Center ¼ of Couscous mixture on each sheet, top with Salmon, Zucchini, Squash & Lemon. Season with salt & pepper.
4. Bring up foil sides, double fold at the top. Through open end, add ¼ of remaining water and seal.
5. Place packets on cookie sheet and bake for 20-25 mins.
