eggplant paresan

Ingredients

2 large eggplants2 cups mozzarella3/4 cup three cheese combination (or parmesan)canned tomato/spaghetti sauce1/2 cup egg product1/2 cup milk3 Tbs of olive oil (in spray form)
pre-heat oven to 350
peel eggplants & slice in 1/4 to 1/2 slices
in a bowl, mix egg product & milk
in another bowl, put bread crumbs
spray cookie sheet with olive oil
dip eggplant slices into mixture & then into bread crumbs & put into cookie sheet & spray with olive oil
bake eggplant slices until they are a little mushy & browned
assemble as such:
egglplant, tomato sauce, mozzarella
on top sprinkle the three cheese combination
bake about 30 minutes, or until cheese is bubbling.
