1 1/2 boneless skinless chicken breasts1 1/2 cups brown rice1 can refried beans2 T. taco sauce1 tsp. ground cumin6 tortillas1 can enchilada sauce3 oz. shredded cheddar cheese
Bake chicken breasts in 375 oven till done. Shred and mix with rice and taco sauce. Heat tortillas in microwave, spread with 3 T. refried beans, 1/3 c. chicken mixture. Roll up and place in baking dish (pour small amount of sauce into dish first.) Pour remaining sauce over top, sprinkle with cheese. Cover with foil and bake for 20 min. Uncover and bake 10 min. more. Makes 6 servings
