Ingredients
*Harvest Land, Cutlet Chicken Thigh Filets Boneless/Skinless), 16 oz *Butter Flavor No- Stick Cooking Spray (1 spray = 1 Serving), 8 serving *Egg Beaters, 0.25 cup *Onion powder, 1 tbsp *Garlic powder, 2 tsp *Lime Juice, .5 lime yields *Seasonings to Taste (Paprika, Black Pepper, Oregano, Sodium-Free Seasoning), 1 serving *Kikkoman Panko Japanese Style Bread Crumbs, 1 cup *Kraft, Italian Five Cheese, 14 gram(s)
Directions
Remove CHICKEN from package and thoroughly rinse.

Preheat oven to 375 degrees Farenheit. (If you want to reduce the cooking time increase the temperature.)

Line a baking pan with aluminum foil and lightly coat with the BUTTER FLAVOR NO-STICK COOKING SPRAY.

Place CHICKEN in a mixing bowl and add LIME JUICE, SODIUM-FREE SEASONING and EGG BEATERS, then set aside (I allowed the chicken to marinate in the mixture overnight in the fridge).

In a large recloseable bag combine all dry ingredients (BREAD CRUMBS, ONION POWDER, GARLIC POWDER, OTHER SEASONINGS TO TASTE AND ITALIAN CHEESE).

Remove CHICKEN from the LIME JUICE, SODIUM-FREE SEASONING and EGG BEATERS mixture, place in the resealable bag and coat with the dry ingredients.

Once the CHICKEN has been evenly coated place the CHICKEN on the baking pan, ensuring that the pieces do not touch. Lightly mist the chicken with the BUTTER FLAVOR NO-STICK COOKING SPRAY.

Place in the oven and bake for 45 minutes.

Yields approximately 4 servings (should be about 4 oz. each).

Thanks for the recipe. I made this and I was surprised at the crispiness of the chicken. I did make one change. I turned the pieces over before I took them out and placed them under the broiler for about 3 minutes so that they would crisp up too. Sent it to my sister to try. - 10/21/09

That's a good idea, I may modify the recipe. Let me know what your sister thinks of it.

Wow, these were yummy! So juicy for baked, breaded chicken. My 2 year old's favorite food group is chicken nuggets and sometimes she won't eat anything else. I'm glad to have a healthier version that she loves also. Thanks! - 10/4/09

I'm so glad that you enjoyed them and it warmed my heart to hear that this will be something that will work for your toddler.
