Chicken Enchiladas

3 cooked chicken breasts, chopped1 can no salt added tomatoesI medium onion, choppedI can ortega green chiles1 can Old El Paso enchilada sauce 3/4 cup Kraft Shredded 2% Four Cheese Mexican3/4 cup fat free sour creamI package green giant frozen spinach no sauce (9 oz), thawed10 Mission whole wheat tortillas
Saute the onion and green chiles, add the tomatoes and spinach, then the chicken
Let simmer for 5 - 10 minutes
In a saucepan, combine enchilada sauce and sour cream. Stir and let heat for about 5 minutes, add cheese, stirring sauce continually for 1 minute
Take chicken mixture and place evenly into ten tortillas, wrapping them like a burrito
Place wrapped burritos into glass baking dish
Cover tortillas with sauce in pan
Sprinkle with cheese
Cover and bake at 350 degrees for 30 minutes
Makes 10 servings
