Turkey Manicotti or stuffed jumbo shells

Ingredients
1/4 C quick oatmeal2/3 C boiling water1 lb lean ground turkey1/2 - 1 C mushroom (optional)1/2 - 1 C celery (optional)1 1/2 C (12 oz) cottage cheese1 tsp dried basil1 tsp dried oreganosalt and pepper to taste14 uncooked manicotti shells OR 1 box jumbo pasta shells1 jar (28 oz) spaghetti sauce1/2 C water1 C (4 oz) shredded mozzarella cheese
Directions
1. Mince mushrooms and celery in food processor; set aside
2. Heat oven to *350
3. Place oatmeal in a small bowl and add boiling water; stir and set aside
4. In a large skillet cook turkey until no longer pink; drain if necessary.
5. Add mushrooms and celery; cook several minutes
6. Add spices, mix
7. Add cottage cheese, mix well
8. Spread 1/2 C ragu sauce in bottom of 9x13 inch baking pan
9. Stuff manicotti or shells with meat mixture
10. Place in ragu-coated pan
11. Mix remaining ragu with 1/2 C water. Pour over shells.
12. Cover with foil. Bake for 1 1/4 hour or until shells are tender. Uncover. Sprinkle with Mozzarella cheese. Bake 5-10 minutes longer or until cheese is melted
