Tzatziki

Ingredients
1 pint yogurt, fat free1 cloves garlic, 1 medium cucumber, ¼ tsp salt,1 tablespoon red wine vinegar, 1 tablespoon extra virgin olive oil2 tablespoons Mint, chopped
Directions
Put yogurt in cheesecloth and suspend over bowl for 2 hours to drain
Peel cucumber, slice in half longways, and remove seeds
Salt and leave upside down for water to drain off
Rinse cucumber & cut into tiny slices
Mash garlic with a little sea salt till smooth
Add olive oil & vinegar to garlic & cucumber
Stir to mix
Add mixture to drained yogurt
Add mint and stir
Refrigerate for 24 hours
