1 eggplant, peeled and cubed.3 Tbsp olive oil1 large onion, chopped.3-5 cloves garlic, minced.3 large tomatoes, chopped.1 can chick peas, drained and rinsed.1 tsp cinamonsalt & pepper to taste
peel & cube eggplant. Saute in olive oil until tender. Add onions & garlic. Add chopped tomatoes. Add spaghetti or tomato sauce. Drain & rinse 1 can chick peas - add to heat through. Season with 1 tsp cinnamon. Pepper, salt to taste. Serve over brown rice

serving size is only 0.5 cup! recipe needs more instructions, like how long 2 saute onions/garlic...how much sauce 2 add? i substituted 1 can diced tomatoes, since i didn't know. also used 6 cloves garlic and red pepper flakes. sauteed spice w/ veggies b4 adding tomatoes and peas. - 4/28/10
