Crab Stuffed Shrimp

3 Tbs Olive Oil1 Onion, finely diced1/4 Cup Parsley, chopped1/2 Cup Ham, cooked and finely diced1 Cup Cornbread crumbs3/4 cup Chicken Stock1 Pound Lump Crab Meatsalt and pepper to taste2 Pounds large Shrimp12 Strips of Bacon, cut in half
Heat Oil in skillet over med heat. Saute the onion, ham and 2 Tbs parsley for 3 -5 minutes. Combine cornbread crumbs with the ham mixture in a large bowl. Add chicken stock a little at a time till evenly moistened. Gently fold in crab and remaining parsley. Season with salt and pepper.
Preheat oven to 400
Butterfly shrimp and open flat. Spoon crab mixture onto cavit of the shrimp and wrap with a piece of bacon. Place in a lightly butter baking dish and bake for 10 - 15 minutes or until bacon is crispy.
