Chili Con Queso Dip

Ingredients
1 (14 oz) Can Diced Tomato1 (10 oz) Can Tomato with Green Chilies1 tsp Olive Oil1/2 Cup Onion, chopped2 Garlic cloves, chopped1 (8oz) Lite Cream Cheese1 tsp Chili Powder6 ozs Velveeta Light
Directions
Drain both cans of tomatoes; reserving 1/3 cup juice.

Heat oil and add onion and garlic and saute 4 minutes. Add cream cheese; stir till melted.

Add tomatoes, tomato juice and chili powder, bring to a boil; add velveeta; reduce heat to a simmer and cook 3 minutes.

    "This is better than On the Border restaurant's queso!" Since I could not buy just 6oz of Velveeta and NEVER used it- I put all 16 oz in, but he loved it! Personally, it tasted very Velveeta-y, so will put less in next time, but kudos! - 7/27/10
