BIG EASY SHRIMP

Ingredients
* Canadian Bacon, 2 slices (6 per 6-oz pkg.) * Onions, raw, 1 small * Green Peppers (bell peppers), 1 cup, chopped * Celery, raw, 1 stalk, medium (7-1/2" - 8" long) * Garlic, 1 clove * Canned Tomatoes, 1 can * 1 Bay Leaf * Pepper, black, .5 tsp * Hot Pepper Sauce, 1 tsp * Shrimp, raw, 16 oz * 1 tsp Worcestershire sauce
Directions
Cook the bacon on in a large skillet over medium heat until crisp.
Place on a paper towel-lined plate to drain.
Crumble when cool.
Remove and discard all about 1 tablespoon drippings from skillet.
In the hot drippings over medium heat, cook the onion, bell papper, and celery for 5 min. or until tender.
Stir in the garlic and cook for 1 min.
Add the tomatoes (with juice), bay leaf, black pepper, Worcestershire sauce and hot pepper sauce. Heat to boiling.
Reduce the heat to low and simmer for 20 min.
Add the shrimp and bacon and cook for 10 min.or untilthe shrimp are opaque.
Remove and discard the bay leaf before serving.

    Delicious! Didn't have the hot sauce or bay leaf so just used some of Emeril's seasoning in it and it was great! The whole family loved it - for sure will make it again :) - 9/15/10
