Spicy Brown Mustard Salmon Salad

Ingredients

1 14.75 oz can of salmon2 stalks celery, chopped 2 tbsp spicy brown mustard (more to taste)2 1/2 tbsp capers4 tbsp chopped onion (I used red)pinch dried dillpepper, to taste (opt)
Remove backbone and skin from salmon and mash well with fork.
Mix all ingredients well and chill for 30 minutes (not necessary but makes best flavor).
Serve over chopped lettuce or cabbage, cucumbers, and tomatoes.

TMJ variation:
Leave out the celery and use some celery salt or finely mince the celery. If you can't chew the onion, either, then sprinkle in some onion powder instead.
Makes about 3 cups. Serving size is a heaping half cup.
