Crisp Mini Burges

Ingredients
6 oz Pork tenderloin1 Egg1 T Honey.5 Cup Pecans1 T Olive oil.5 Green Apple, small4 oz Broccoli slawScant 2 T plain yogurt.5 T Light Mayo2 Whole wheat English muffins
Directions
Cut pork to 1.5 oz slices and flatten.
Whisk the egg and half of the honey together in a shallow dish. In another shallow dish combine the pecans with some salt and pepper.
Dip the pork in egg mixture, then dregde in the nuts, pressing in to coat.
Cook the pork in oil 2-3minuts per side.
For the slaw, slice the apples thinly and combine with the broccoli slaw, yogurt, mayo, and second part of honey. Season with salt and pepper.
To assemble, place one burger on each of 4 English Muffin halves, top with the slaw. One serving is two burgers, but served with a side of vegetables one burger works great.
