Sausage Potato Soup

1/2 pound smoked kielbasa or polish sausage6 medium potatoes, peeled & cubed2 cups frozen corn1 1/2 cups chicken broth1 celery rib, sliced1/4 cup sliced carrots1/2 tsp. garlic powder1/2 tsp. onion powder1/2 tsp. salt1/4 tsp. pepper1 1/2 cups milk2/3 cup shredded cheddar cheese1 tsp. minced fresh parsley
Serves 6 according to the recipe. But i think it really serves about 4. =)
In a large saucepan, brown sausage. Drain & set aside.
In the same pan, combine the potatoes, corn, broth, celery, carrot & seasonings. Bring to a boil. Reduce heat. Cover & simmer for 15 minutes or until veggies are tender. Add the milk, cheese, parsley & sausage. Cook & stir over low heat until cheese is melted & soup is heated through.
