Ingredients
# Beans, red kidney, 2 cup # Green Peppers (bell peppers), 0.5 cup, chopped# Tomato Paste, 0.25 cup # *Cumin seed, 2 tsp # Curry powder, 1 tbsp # Chili powder, 2 tsp # *Coriander leaf, dried, 1 tbsp # Salt, 1 dash # Red Ripe Tomatoes, 1 large whole (3" dia) # Collards, 1 cup, chopped # Water, tap, .5 cup (8 fl oz)# Taco Shells, 6 miniature (3" dia)
Directions
-fry onions and spices with a tablespoon of the water in a teflon pan
-add tomato paste and water
-add kidney beans. Cook until the flavours have come together and the mixture is soft and hot.
-Serve in taco shells with shredded collards and slices of tomato.
