Lentils and Sausage Salad

Ingredients

1 1/4 cup Lentils (pre-soaked)1 carrot shredded1 can quartered artichoke hearts drained and rinsed3 green onions sliced1 packages portabello sausage1/4 cup fat free basalmic vinagrette
Pre soak the lentils and then add to a pot of boiling water, immeadiately cover and turn down to a simmer. Simmer for 25 minutes. Drain and add to a large salad bowl when done.
While lentils are cooking slice sausage about 1/2 inch thick and cook in a pan until completely cooked through. Add to bowl.
Add in artichokes and carrots. Drizzle vinagrette over the top and toss all ingrediants together. Garnish with sliced green onions. Serves 4.
