1 pound penne pasta3 T. Olive Oil5 garlic cloves1 t. red pepper flakes1 24 oz. fire-roasted diced tomatoessalt and pepper, to taste
serves 2-4
Cook pasta according to directions. Heat oil in a large-siz saute pan. Add garlic and red pepper flakes and saute for about 3 minutes.
Add tomatoes, stirring to combine with the garlic and pepper flakes. Let simmer over low heat for 10 to 15 minutes.
Toss together sauce and pasta. Salt and pepper to taste.
