3/4 Cup Cooked Brown Rice1/2 C. Shredded Cheddar Cheese1 Small Onion Diced2 Large Eggs Beaten1 Pound Fresh Spinach Washed and Chopped2 T. Parsley (fresh or dried) chopped1/2 t. salt1 t. pepper2 T Breadcrumbs
Cook Brown Rice per Instructions
Saute Chopped Onion in broth or oil
Combine Eggs and Spices and Sauted Onions
Combine Rice and Cheese
Mix two together
Add Chopped Spinach
Transfer to a caserole dish (spray with non-stick spray)
Top with Breadcrumbs
Bake in 350 degree oven for 30 minutes
