4 Large fresh Tomatoes2 Medium sized eggs2 Medium rashers of lean bacon4 leaves of fesh Basil1 tsp curry poder1-2 tablespoons of MilkPepperSalt
Filling: Boil eggs for 10 min or until hard boiled and place bacon in pan (no oil needed) until crispy. Remove egg shells and "mash" the egg into small pieces adding the milk. Dice bacon into small pieces and mix with egg mixture, then add basil, curry, pepper and salt
Scoop insides out of tomatoes leaving only the thick outer layer and stuff tomatoes with the filling. Serve on a bed of lettuce, with a main or just for a snack. Serves 4.
