Chicken & Dumplings-Healthy Style

Ingredients
1 Can Pillsbury Grans Biscuits (Reduced Fat) Quartered1 lb Chicken Breast diced8 Cups 99% RF Chicken Stock2 Cans Healthy Request Cream of Mushroom or Chicken Soup2 Cups Carrots Chopped1 Cup Onion Chopped (about 1 medium onion)2 Cups potato diced2 Bay Leaves2 Garlic Cloves
Directions
Brown the chicken breast in a heavy stock pot in Pam, set chicken to the side
Sautee the onions in a heavy stock pot in Pam
Once the onions are translucent, add the carrots, chopped garlic and potatoes. Sautee for 4-5 minutes
Add the chicken back to the pot
In a bowl mix together the cream of soups with 1/2 of the stock to thin out the soups
Add the mixture to the pot, along with the reamining stock
Add the Bay leaves and any other dried spices you like (oregano, parsley, etc)
Let cook until the potatoes are cooked through
Add the quartered biscuits and cover the pot for 15-20 minutes on low heat (stir occassionaly to keep the biscuits from sticking to each other.)
