Chicken Corn Casserole

1 lb cooked, diced chicken breast1 (11 oz) can Mexican-style corn (undrained)1 (10 oz) can Rotel (undrained)1/2 cup corn muffin mix1/4 cup fat free sour cream1/4 cup fat free mayo1/4 cup shredded fat free cheddar cheese
1. Preheat oven to 425 degrees. Coat 2-quart baking dish with cooking spray.
2. Combine all ingredients (but cheese) in medium bowl. transfer mixture to baking dish. Bake 15 minutes.
3. Remove from oven, sprinkle with cheese, bake 5 more minutes or until cheese melts. Let stand 5 minutes before serving.
