The Devine Mushroom Gravy

1 small onion, minced2 tbsp olive oil1 or 2 cloves of garlic, minced1 lb (at least) of fresh mushrooms I use a variety crimini, shantorelles, button, shitaki4 cups chicken or preferrably a vegetable stock1 tbsp worchestershire sauce2 tsp tamari soy saucecorn starch or flour to thicken (not too much)
Mince onion and garlic and saute in a large saute pan in olive oil until very soft.
Add mushrooms and cook until they are soft and wet.
Add stock and cook gently for about 10 minutes
Add tamari and worchestershire sauce and stir
Add corn starch or flour that's been shaken with a little water to thicken.
Heat thru and enjoy over lean pork or vege stock mashed potatoes or as an addition to thanksgiving or christmas dinner.
ENJOY!!
Makes 8 1/4 c. servings or enough for a large family dinner to please the vegetarians in the bunch
