Southern Fried Catfish

Ingredients
4 catfish fillets, 4 oz each3/4 cup cornmeal1/4 cup All-purpose flour1/2 cup milk2 eggs, beaten1/8 tsp red pepper sauce, optional2 tbsp vegetable oil
Directions
Heat oven to 275 degrees. Heat oil (2 to 3 inches) in a 4-quart Dutch oven to 375 degrees Rinse fish ; pat dry with paper towels.
Mix cornmeal, flour and salt in large bowl. Stir in milk, eggs, pepper sauce and 2 tbsps. vegeatble oil until well blended. Coat fish with cornmeal batter, shaking off excess.
Fry 2 fish fillets at a time in oil 5 to 8 minutes or unitl golden brown. Drain on paper towels. Keep warm on cookie sheet in oven while frying remaining fish.

    Not my favorite. Could be I just don't care for fish. It was really too plain but my bf suggested that adding cayenne or some sort of lemon flavoring might help. - 10/8/07
