Layne's Sour Cream Mashed Potatoes

Ingredients
5 Baking Potatoes, medium-to-large sized5 cups Water1 cup Sour Cream3 Tblsp Smart Balance Buttery Spread1 tsp Salt1/4 tsp Pepper3 cloves Garlic, minced
Directions
1. Chop potatoes into a large sturdy cooking pot.
2. Add water to cover potatoes.
3. Cook on high for at least 15-20 minutes until potatoes are soft.
4. Drain excess water & return to stove on a low heat setting.
5. Mash potatoes together with a masher or the bottom of a glass. Add all other ingredients and mix well.
6. Serve warm.

Makes 6 servings (approx 3/4 cup each). Leftovers can be made into patties and fried up the next morning as a great side with eggs.
