Rhubarb Sauce

Ingredients
5 cups diced rhubarb (can use frozen)1 cup sugarcinnamon and nutmeg to tasteenough water to cover rhubarb
Directions
Put rhubarb in a medium saucepan. Add enough water to cover rhubarb, and bring to a boil, stirring occasionally. Turn heat to minimum, and add cinnamon and nutmeg. Mix well. Allow to cool, stirring occasionally. Serve alone, or as a topping for ice-cream. Makes about 10 1/2 cup servings.

    Works out to about 10 1/2 cup servings. Could be a bit less if you boil it down to make it thicker.

    I'm not a fan of Rhubarb but my DH is and he loved it. Next time I'll add less water as it was a bit on the watery side he said. - 6/16/10
