Tuna Cucumber Cups

  • Number of Servings: 6
Ingredients
1 medium cucumber, peeled1 can (1.5 oz) water-packed tuna2 carrots, diced1 tbsp light mayonnaise
Directions
To create the cups, slice cucumber crosswise into 1 to 2 inch thick rounds.
Scoop out inside with spoon and discard, or use to top
filling.
Mix tuna, carrots and mayo and fill cucumber cups with this mixture.
Sprinkly thinly diced carrot over top or use insides of cucumber.
Chill before serving.
Refrigerate leftovers.

Great no-cook meal that your kids can help you prepare, endless 'filling' possibilities.

    Try this with crab (imitation is easiest) sticks like the sushi restaurants do. Just "shred" the crab and mix with a tiny bit of fat free mayo. You can add a little diced onion and cuke to the mix.. sprinkle with toasted sesame seeds and... DEEE LISH!! Yummy! (sort of like the crab delight version) - 7/16/08

    I made this only about an hour ago and I have to say it was delicious!

    I made it for one so I used only a teaspoon of sundried tomato and basil tuna (ONLY 10 CALORIES), half a teaspoon of philly, onion and carrot. it was surprisingly filling and absolutely delicious. I would make it again! - 6/23/08

    I thinly chopped onion and celery and added it in, then curled the carrot for on top, Sprinkled with ground whole peppercorns. So easy and fancy. I will serve at my next party.
