Turkey Burgers with Sweet and Sour Pepper Relish

Relish1 small onoin, cut crosswise into 1/2 inch thick slicesEVOO3 red/yellow peppers1 1/2 tbsp cider vinegar2 tbsp Honey1/2 tsp kosher salt1/4 black pepper1/8 cayenne pepperBurgers2 lbs ground turkey1/4 plain breadcrumbs1 1/2 kosher salt1 tsp dried sage1/2 tsp ground black pepper1/4 ground nutmeg1/4 tsp ground ginger2 to 4 tbsp milk
1. to make relish brush both sides of onions with oil. Grill onions on BBQ until the onions are tender and the peppers are blackened and blistered all over. Turning Occasionsaly. The onions will take 8-12 minutes; peppers 12-15 mins. REmove from grill, cut onions in 1/4 inch pieces. Divide onions reserve half for relish and half for burgers. Place peppers in a bowl for 10 minutes covered with plastice wrap. then peel away charrred skin, cut into 1/4 inch pieces.
2. in a small saucpan, over med heat, combine vinegar and honey. Stir until honey dissolves, and then simmer for 3 minutes. Add salt, pepper, anc cayenne. In a med bowl, combine the peppers and half the onions and pour warm vinegar mixture over the vegetables. Mix well.
3. To prepare burgers, In a large bowl gently mix reserved onions and all the burger ingredients except milk. Add as much milk as the mixture will absorb. From into 6 burgers, each about 4 inches in diameter, 1 inch thick. Brush with oil and the grill over medium heat for about 15 minutes. Turning once.
4. Grill buns over heat, spread mustard inside each bun, add burger, and top with relish.
