Apple-Raisin Pork Chops for 2

Ingredients
2 Pork, fresh, loin, top loin (chops), boneless, separable lean and fat (original recipe calls for 3/4 inch thick and 8oz each bone-in pork loin chops but I use boneless 4oz each)1 tsp EVOO1/8 teaspoon saltdash pepper1/2 cup apple cider or juice2 tsp spicy brown mustard1 medium red apples, sliced1 sliced green onions2 tbsp raisins2 tbsp dried currants1 tbsp cornstarch3 tbsp cold water
Directions
1) In a large skillet, brown pork chops in oil. Sprinkle with salt and pepper.
2) Combine cider and mustard; pour over meat. Bring to a boil; reduce heat. Cover and simmer for 13-18 minutes or until a meat thermometer reads 160° Remove chops to a serving platter; keep warm.
3) Add the apples, onions, raisins and currants to the skillet. Cover and cook over medium heat for 2-3 minutes or until apples are tender. Combine cornstarch and water until smooth; stir into apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork chops.
