Salsa chicken stew

1 tbsp olive oil1.5 lbs chicken breast, chopped5 cloves garlic, minced1 tbsp cumin1 tsp ancho 1 tsp cayanne2 cans tomatoes with chilies (20oz total)1 cup salsa3 chilies in adobo sauce, chopped1 15.5oz can kidney beans1 10oz box frozen corn1 tbsp corn starch1 tbsp water
Heat oil in a large pot. Add garlic and chicken and cook chicken through. Add spices.
Add tomatoes, salsa, chilies, beans and corn. Stir and bring to a boil. Simmer for 20 minutes. Raise heat and bring to a boil.
Mix cornstarch in water. Add to pot. Boil and stir a few minutes.
Serve with rice, corn bread or anything you want. Feel free to play around- add more beans, cilantro, change up the meat.
