Vegan Chickpea Samosa Wraps

Directions
1. Cook the potatoes. I like to bake them for flavor, but you may also steam or boil them. Cook with skins until soft.
2. Chop onion and add to a nonstick pan. Add the 1 cup of peas and start to cook over medium heat. Add the ginger, diced jalapeņo, and curry.
3. When the peas start to thaw and onion starts to brown, add your diced tomatoes and chickpeas. Squeeze in the lemon juice. Turn heat to low and cover for about 3-5 minutes.
4. Cut your cooked potatoes into bite size pieces and add to your mixture. Let cook a few minutes longer.
5. Warm tortillas according to package directions. Scoop 1/6 of filling in your warmed tortilla, and add salt to taste.
This pairs great with a side of roasted squash and rice!
