Cannellini Bean Stew

2 15 oz cans cannellini/white beans, drained & rinsed1 14.5 oz can broth- I use vegetable2 garlic cloves, minced1 bay leaf6 carrots, diced3 cups fresh spinach (sometimes I sub 1 box frozen but not as yummy)1/2 tsp salt1/4 tsp pepper2 Tbsp olive oil1 14.5 oz can diced tomatoes, with juice1 16 oz bag frozen green beans, or use fresh
makes 10 1 cup servings
In large pot, over medium heat, bring the following to a boil-- beans, broth, garlic, bay leaf, and carrots.
Cover, reduce heat, sommer 15 minutes
Remove and discard bay leaf
Add tomatoes, green beans, spinach, salt, pepper and olive oil.
Simmer aprox 10 minutes
Serve and enjoy!

SO GOOD! I first thought there would nt be near enough liquid to bring to a boil, but it did. My husband and daughters even liked it...wont be one fo their favs bbut will soon be one of mine. Plenty left over for my lunch tomorrow and so very healthy for me. Really enjoyed it. - 1/7/10
