Ingredients
1 tbsp olive oil1 cup raw onion, sliced1.5 cups green pepper, cut into strips1.5 cups red pepper, cut into strips2 medium tomatoes, roughly chopped6 spanish olives w/pimento 3 tsp chili sauce1 tbsp capers, drained1/4 tsp cumin seed16 oz. raw shrimpjuice of one lime 1/4 cup tomato sauce, with tomato tidbits4 servings of brown riceGarlic, optional
Directions
Heat oil in a large frying pan and add the onion and peppers (optional to add garlic). Cook until soft.
Add chili sauce, roughly chopped tomatoes, chopped olives, cumin, salt (to taste), capers and tomato sauce.
Once the sauce is simmering, add shrimp until they curl up and turn pink (DO NOT overcook them!)
Add the lime juice and serve over rice.

    I usually add more peppers and onions because I do that to all my recipes but I have made this three times and love it. I used cocktail sauce instead of the chile sauce because that is what I had and the horseradish adds a nice touch. - 12/11/08

    I omitted the olives and didn't have capers but this was easy and delicious! A perfect amount of kick and very filling! I'm not a leftover person but ate every bit of these leftovers for lunch the next day. - 3/13/07

    This is a very good recipe indeed--just be aware that the brown rice is included in the nutrition info. I used some spaghetti sauce in place of tomato sauce, and cooked shrimp that the sauce heated up. Very fresh and pretty meal. - 5/22/07

    I made a shrimp recipe last night that was delicious. Just buy a package of commercial ham sandwich slices cut very thin.I cut the long side of ham into three slices then wrap one slice around a large cooked shrimp.I cook several of them at once in an olive oil base or just cook the shrimp by itself - 9/19/13
