Easy Portabella Mushroom Salad

4 Portabella Mushrooms, sliced1 tsp Olive Oil2 Chopped Tomatoes2 TBSP Fresh Basil2 TBSP Fresh Cilantro2 Cloves Garlic, chopped2 TBSP Balsamic Vinegar1 TBSP Low Salt Soya Sauce1 TBSP Lemon Juice
Heat fry pan to medium, add Olive Oil
Slice mushrooms in 1/2 inch thickness and add to pan
Cook until browned and softened
While cooking, mix Basil, Cilantro, Garlic, Balsamic Vinegar, Soya Sauce and Lemon Juice in a bowl.
Chop tomatoes and add to bowl with the liquid.
Remove mushrooms from pan once browned and softened and chop into cubes
Add mushrooms to herb and sauce mix and stir well.
You can serve this immediately or refrigerate in a sealed container in the fridge for a week. It's a favourite of mine to snack on at work.
