Flax Seed Muffins

Ingredients
1/3 C freshly ground flax seed2 C whole wheat flour1 tsp baking soda1/2 C sugar1/2 tsp salt2 medium eggs1/3 C applesauce1 C reduced fat buttermilk
Directions
Preheat oven to 500deg. Blend the dry ingredients. In a separate bown, beat eggs, applesause and buttermilk until light and bubbly. Blend wet ingredients into the dry. Stir in any fruit if desired. I like to add zucchini. Fill greased muffin cups 2/3 full. Reduce heat to 400deg and bake for 15-20 minutes or until the tops of the muffins spring back when pressed lightly. Makes 16 muffins!!

    I made this substituting splenda for the sugar, and flax seeds for the ground flax seed, 1 c of skim milk w/1 T lemon juice for the buttermilk. 15 minutes in my oven was too long. I will make these again, but will add cinnamon and maybe a bit of nutmeg. They are very good. (103 cal) made only 12 . - 3/6/10
