Vegetable Couscous

Ingredients
1 box Near East Plain Couscous1 tbsp Olive Oil1 Orange Bell Pepper1 cup Broccoli (frozen, thawed and prepared)2 medium Tomatoes3 cloves Garlic1 medium Onion2 cups Water
Directions
Chop onion, garlic, pepper. Heat olive oil in large skillet and sautee onion, garlic and pepper. Once the pepper starts to soften, add 2 cups of water and bring to a boil. Push vegetables to one side and add the couscous. Let stand for 5 minutes.
Add broccoli and tomatoes and fluff couscous.
Serves 4.

    P.S. 1 box = 1 cup. See another very similar recipe in the listing that recommends vegetable stock instead of water to enhance taste; less liquid, easier to follow directions for cooking the couscous. - 9/1/07

    used 1/2 the couscous and added some bulb fennel (about 1/2 cup) cut like celery.
