2 Medium Apples, unpeeled1/2 Cup Unsweetened Apple Juice1 Cup Plain Nonfat Yogurt1 Cup Plain Old Fashioned Oats1 Tablespoon Pure Maple Syrup1 Tablespoon (or to taste) Ground Cinnamon
Makes four 1-cup servings.
Cube the apples with peel into 1/4" cubes and place into a medium bowl. Add the apple juice and yogurt and stir to coat the apples. Add the oats, maple syrup, and ground cinnamon and stir until combined. Place plastic wrap over the bowl and place in the refrigerator overnight. Serve cold. Will keep for up to two days.
