Mediteranian Chicken Pasta

Ingredients
6oz can artichoke hearts1tbs olive oil12oz boneless skinless chicken breast cut up3 cloves garlic, minced1/4c low sodium chicken broth1tsp oregano7oz jar roasted red peppers1/4c black olives3c cooked wheat pasta (penne)1/4c crumbled low fat feta
Directions
1. Drain artichoke hearts, reserving liquid, and chop them. Heat oil in large skillet over med-high heat; add chicken and garlic. Stir and cook until chicken is brown. Add artichoke juice, broth, and oregano.
2. Bring to a boil; reduce heat. Simmer, covered, for 10 minutes. Stir in artichokes, red peppers, and olives.
3. Spoon chicken mixture over pasta and sprinkle with feta.
