Very Veggie "Fried" Rice

1 cup cooked brown rice2 cups raw broccoli florets1/2 cup frozen mixed vegetables2 tbsp soy saucenon-stick cooking spray (canola or olive oil)I Can't Believe It's Not Butter! spraygarlic powderblack pepperpowdered ginger
Cook rice ahead of time and refrigerate until cold. Cold rice works best as it will not become mushy when heated.
Lightly spray a skillet with non-stick cooking spray and add broccoli. Cook until slightly softened. Add mixed vegetables and cook until heated, about 3 minutes. Spritz with buttery spray for some extra flavor.
Add cold rice and toss over low-medium heat with a wooden spoon until rice is heated through. Sprinkle soy sauce, ginger, garlic, and pepper until seasoned to your liking. Pour it all into a bowl (or two) and enjoy!
Makes one giant serving (about 2.5 cups) or two smaller servings.
Optional: If you want to add 1/4 cup scrambled Egg Beaters for some extra protein, scramble that before you cook the broccoli and veggies.
