Fried Potatoes and Eggs

Ingredients
3 tbsp soft margarine2 tbsp canola oil6 baked or boiled potatoes, cubed1 medium onion, chopped6 large eggssalt and pepperBack Eddy's Seasoning Salt
Directions
Heat margarine and oil in pan. Add cubed potatoes. While they are frying chop onion and add. Season. When browned, make holes in potatoes and add eggs. Season the eggs. Let set for a while and scramble-fry until done. Makes 6 small portions. Hungry kids- 4 servings.
Add ketchup or other toppings, such as fresh veggies and cheese.
