Morning Glory Muffins

3/4 cup whole wheat flour1/2 cup white flour1/2 t baking soda1 t baking powder1/2 t salt1/2 t cinnamon1 cup old fashioned oats, not instant1/3 cup 1% or skim milk2/3 cup unsweetened applesauce1/4 brown sugar, packed1/4 cup molasses2 T canola oil1 large egg, slightly beated1 1/2 cup carrots, shredded1/2 cup chopped prunes
Preheat oven to 400. Line muffin pan with liners.
In large bowl which flours, baking soda, baking powder, salt and cinnamon. Stir in oats.
In medium bowl w/ fork mix milk, applesauce, brown sugar, molasses, oil and egg until blended. Stir in carrots and prunes.
Add wet ingredients to flour mixture and stir until just moistened. Batter will be lumpy.
Spoon batter into muffin cups. Cups will be full.
Bake 23-25 minutes or until toothpick inserted comes out clean. Immediately remove muffins from pan. Cool on a wire rack.
You can enjoy warm but I think they are better the next day!
