Butternut Squash and Wild Rice

Ingredients
1/2 Butternut Squash cubed (about 3 cups)Trader Joe's brown rice medley, 3/4 cupSwanson Chicken Broth 99% Fat Free, 2 cupwater, 1/2-3/4 cup (as needed)Onion, chopped 1 smallGarlic, 2 cloves, chopped2 Tbsp fresh chopped parsley1/4 tsp poultry seasoning (no salt)season salt to taste (optional)
Directions
heat squash in microwave for about 3 minutes, peel and cube
saute onion and garlic in a pan until onion is soft, add squash and cook until squash is barely soft
add rice and herbs, and stir for about 3 minutes
add broth and water, bring to a boil
reduce heat and simmer with lid on until done (about 25-30 min)
