BANANA OAT BRAN BREAD 3/4 c. oat bran3/4 c. whole wheat flour1/4 c. all-purpose flour1 tsp. nutmeg1 tsp. baking soda1/2 tsp. baking powder1/4 tsp. salt2 ripe bananas - mashed1/2 c. mini chocolate chips1/4 c. nuts2 tbsp. lemon juiceGrated peel of lemon1/2 c. sugar2 egg whites beaten1/4 c. vegetable oil1 tsp. vanilla
Combine oat bran, flours, nutmeg, baking soda, baking powder and salt. In separate bowl, combine bananas, lemon juice, peel, chocolate chips, nuts, sugar, egg whites, oil and vanilla.
Stir dry ingredients into banana mixture. Transfer into a lightly greased and floured 9 x 5 inch loaf pan and bake at 350 degrees for 45 minutes or until wood pick comes out clean. Turn bread onto cooling rack before slicing. Bake 12 slices.
