Brown Rice with Shrimp and Spinach

Ingredients
2 tablespoons olive oil4 cloves sliced garlic1.5 cups of brown rice3 cups chicken broth1 canned diced tomatoes4 cups raw spinach1 lb. raw, peeled shrimp
Directions
- Heat olive oil in large skillet.
- Add garlic and cook until fragrant and lightly browned.
- Add rice and cook until rice is lightly browned.
- Add chicken broth and tomatoes with juice.
- Bring mixture to a boil, and then simmer slowly for 55 minutes.
- When rice is cooked through, add spinach and shrimp.
- Cook for 5 more minutes or until shrimp are cooked through.
