spinach and corn with grated cottage cheese

spinach, fresh 1 small bunchsweet corn 1 cupcottage cheese, non fat, grated, 1 cupolive oil, 1 tbspred ripe tomatoes 4-5onion, finely chopped, 1salt 1 tspgreen chillies 2-3pepper, black 1/2 tspcloves, 2garlic 8 cloves, choppedred chilly powder, 1/2 tsporigano 1 tsptomato ketchup, 2 tsp
serving size: 6 medium bowls
1. chop the tomatoes and make a puree in a mixer-blender.
2. add 1/2 tbsp olive oil, 1/2 tsp salt, 2 tsp tomato ketchup and 4 chopped garlic cloves in it. Pour in the tomato puree. add the 2 cloves and heat on simmer for 2-3 minutes and keep it aside.
3. Now separately, add the spinach leaves in the blender wid little water and make a thick paste.
4. Also boil 1 cup of sweet corn.
5. In another pan, add 1/2 tbsp olive oil, 1 chopped onion, 4 chopped garlic cloves, pepper, oregano and saute for 2 minutes till the onion turns golden brown. Now add 1 cup of water and let it boil.
6. After the water boils pour the spinach-water paste in it and cook for another 2 minutes. Now add the boiled sweet corns and grated cheese along with another cup of water and the tomato puree kept aside from before and let it boil till it starts to become a thick broth. In the end add another 1/2 tsp of salt and stir for a minute!
voila! spinach with sweet corn and grated cheese ready!
serve with steamed rice or can be consumed as a thick soup for supper.
