Turkey meatball soup

3/4 lb lean ground turkey3 Tbsp parmesan cheese1 egg1/4 C breadcrumbs2 Tbsp Olive Olive2 carrots, sliced2 stalks celery sliced1/2 onion chopped1 clove garlic minced2 tsp Thyme leaves4 C Chicken Broth1 C small shell pasta1 small Chiplote Pepper in adobo sauce, finely chopped
Combine turkey, parm cheese, egg & breadcrumbs in bowl. Make into approx 1" meatballs. Heat 1 Tbsp Olive Oil in large fry pan & fry meatballs until browned.
Meanwhile heat other Tbsp Olive Oil in a soup pot. Add carrots, celery & onion. Cook on low heat until soft. Season with salt & pepper. Add garlic & thyme. Add Chicken broth. When meatballs are nicely browned, add to soup. Bring to boil & add pasta and chipolte pepper. Season with salt and pepper to taste. Boil until pasta is done. Makes 8 servings
