Grilled Grouper w/ eggplant,red pepper,arugula salad

1 cup ea. nappa (chopped) , bok choy(chopped), arugula. 1/2 cup red bell peppers. 1 med. eggplant(sliced 1/2 in.thick). 1 clove garlic. 1/3 cup Crasins. 1 lb grouper (fresh). tbsp black pepper. 1 tsp salt. 2 tbsp olive oil
While charcoals are heating,on the stove,spray skillet with cooking spay,heat skillet. Mince garlic, dice pepper and add to skillet. Saute 3 mins then add nappa and bok choy, saute until peppers are soft. Place in salad bowl, mix in arugula and Crasins.Spray grouper with cooking spray,salt and pepper. At same time brush eggplant with olive oil. Grill grouper and eggplant until cooked. To serve place 1/3 salad mixture ( appr. 3/4 cup) , top with 2 slices eggplant. Cut grouper into appr. 5 oz. pieces, plate with salad. Appr. 361 calories per serving
