Black Bean Tortilla Soup

Ingredients
4 Cups of Cooked Black Beans2 Stalkes of Celery Chopped1 Large Red Onion Chopped1 Large Bell Pepper, Chopped1 Can of Diced Tomatoes4 Boullion Cubes, Chicken, Vegetable or Beef2 TBL Garlic Powder1 TBL Onion Powder1 TBL Smoked Ancho Chili Powder1 TBL Liquid Smoke (not considered in caloric content, couldnt find it)3 TBL Chili PowderSalt to Taste2 Medium Size Corn Tortillas, cut into strips and then into halves1 Cup of Cheddar Cheese
Directions
Add all ingredients to medium size pot, except tortillas, and cheese, and bring to a boil. While soup is cooking cut tortillas into thin strips and then in half length wise. Apply a thin coat of Pam Cooking spray (canola flavor), to both sides and put in oven at 350 until crispy, probably 5 minutes depending on your oven. Dish up soup and serve with 1/4 Cup of Cheese and 1/4 of the tortilla strips. Enjoy!
