1 whole egg, 2 egg whites, broccoli, squash, onions, spinach, tomatoes, Pam vegetable spray, and a little colby cheese.
Chop veggies and saute in a pan sprayed with vegetable cooking spray. Set aside. Spray pan again with a vegetable cooking spray. Beat together eggs and add to hot prepared pan. Cover until almost cooked. Add veggies and cheese on top and continue to cook covered. Fold over and serve. Makes 1 serving.
