White Chicken Chile

Ingredients
1.5 lbs. boneless skinless chicken breast4 c. cooked great northern beans1 whole onion, diced1.5 c. frozen white corn1 yellow bell pepper, diced3 clove garlic minced6 tbsp. mild green chili diced6 tbsp. hot green chili diced2 can light chicken broth2 tsp. cumin powder1 tbsp white pepper1 tbsp fresh cilantro2 tbsp olive oil1/3 c. lime juice12 tbsp light sour cream6 oz. pepperjack cheese, shredded
Directions
Makes 12 1.5 cup servings.

Cube the chicken breast. Heat olive oil in a large pan and saute onion, garlic, and chicken until chicken is no longer pink.

In a large crock pot add chicken broth, cumin, cilantro, white pepper, lime juice, and chopped green chilis. Cook on high for an hour. Reduce heat to low and add remaining ingredients except sour cream and pepperjack cheese. Cook for an hour. Stir 1 tbsp sour cream into each bowl of chili and top with 1/2 ounce of shredded pepperjack cheese.
