Cherry Multi Grain Muffins

Ingredients
1 cup whole wheat flour1/2 cup all purpose flour1 cup oat bran2 tsp. baking powder1 tsp. baking soda1/4 tsp. salt1 tsp. vanilla1 tsp. cinnamon1/8 tsp. nutmeg2 large eggs1 large egg white1 1/4 cup low fat buttermilk1/2 cup dark brown sugar2 tbs. canola oil1 pkg. dried cherries (unsulphured) 5.5 oz. or other dried fruit6 oz. unsweetened applesauce
Directions
Position rack in middle of oven, preheat to 375 degrees F. Line 12 1/2 cup muffin cups with paper liners.
Whisk flours, oat bran, baking powder, cinnamon, nutmeg and salt in medium bowl.
Lightly beat eggs and egg whites in med. bowl Stir in buttermilk , brown sugar, oil, vanilla and applesauce. Mixture will be thick. Fold in dried cherries. Divide batter evenly into muffin cups and bake about 25 minutes or until firm when gently pressed. Cool 10 minutes and remove from pan.
